The original recipe I found called them biscuits, but they’re not biscuits as I know them, they’re quite soft.  I was looking for something crunchy. Nonetheless, they are good to have as a grab’n’go solution and they’re quick and easy to make.

½ cup coconut flour
¼ teaspoon baking soda
¼ cup melted ghee or butter, plus extra for drizzling on top
4 large eggs
¼ teaspoon salt – for savoury OR 1tsp Stevia – for sweet

Preheat oven to 180C.

Combine coconut flour and baking soda in a bowl and mix well.
Pour the melted ghee into the bowl and mix well (use an electronic hand mixer).
Add the eggs and mix well until combined (if the mixture looks liquidy at first, don’t worry, wait a couple minutes, the flour will absorb the liquid).
Measure out onto a greased baking sheet in generous doses.
Bake at 180°F for 20 minutes or until a toothpick comes out clean.
