Ingredients

500 mlsorghum flour — Maltabella
10 mlbicarbonate of soda

salt — pinch
10 mlmolasses (or replace with honey, coconut flower nectar, or coconut sugar)
20 mlbutter — melted
375 mlplain yoghurt — (or maas)

Method:

Combine the dry ingredients. Mix the molasses, butter and yoghurt together and mix with the dry ingredients. Heat a little oil in a heavy-based pan, then wipe the pan with a paper towel. Drop spoonfuls of the mixture in the pan and heat until bubbles form on the surface. Turn and heat until cooked on the other side.

Makes about 20 crumpets.
