We know that it’s a “tangy mayonnaise spread (made with real vegetables;) perfect for perking up boring sandwiches. Bursting with piquant peppers, onion and carrot bits, Crosse & Blackwell Sandwich Spread (now sadly discontinued) (had) has been providing South Africans with a delicious and zesty addition to their lunch and school sandwich options for more than 20 years…”
A fellow travelling Saffer shared this sandwich spread recipe and it’s had rave reviews!
INGREDIENTS
6 small Carrots
1 of each or any combination of a green, red, yellow Peppers (Capscicums)
3 small Onions (A mix of brown and red)
1 Cucumber
Optional: Peppadews (Baby pickled peppers) for some kick
750ml white vinegar
750ml Crosse & Blackwell Tangy Mayonnaise
1 Tblsp sugar (or alternative sugar sweetener)
Salt and Pepper to taste
INSTRUCTIONS
Grate carrots.
Chop finely and as small as possible: Onions, Peppers (Capscicums), Cucumber, Optional: Peppadews
Pour vinegar over veggies and leave overnight.
Drain and pat dry.
Add Mayonnaise, Sugar (or alternative sweetener), Salt and Pepper to vegetables and mix well.
Scoop into sterilized bottles and seal.
Keep in the fridge.
Voila !
While it is perfect slathered onto bread on its own, why not combine it with fresh tomatoes, cheese and deli meats for an added taste sensation to your normal sandwich. It can even be used as a salad dressing alternative for your favourite braai (BBQ) salads – mix some boiled new potatoes with a decent helping, or dress radishes and chopped raw broccoli for a quick and tasty salad option

It’s quite delicious. We haven’t tried it yet with a lectin-free compliant mayo but we will!
